What is dairy beef?
Dairy animals — Holsteins, Jerseys, and crosses — are already part of the food system. When finished with intention, they produce beef that is distinct: different fat structure, more intramuscular distribution, a longer and more complex flavor close than commodity beef.
Most of it gets ground and disappears into the supply chain. I take it further — selecting animals carefully, aging with assessment rather than schedule, and presenting the full animal with honesty about what you're receiving.

The Market is open year-round for everyday provisions. The Reserve offers limited selections tied to specific animals, available when they're ready and gone when they're complete.
Everyday Provisions
Ground beef, cuts, roasts, bones, and freezer boxes. Consistently stocked. For the household that cooks real food most nights.
Animal-Specific Selections
Each release is tied to one animal — documented breed, finish, and aging. Available cuts are listed per animal. When the animal is sold through, the release closes.

My animals come from Oregon dairy operations — farms I know, within a supply system I can trace. The breed, the finish, the season — all documented.
Every part of the animal is accounted for: steaks and roasts, ground beef, bones and organs, fat rendered to tallow. Nothing wasted. Nothing incidental.
Orders available for local pickup, delivery in the Portland metro, or frozen shipment within Oregon and select Pacific Northwest destinations.
How it works →The Reserve
Each Reserve release is tied to a specific animal — documented breed, dairy origin, finish method, aging days, fat character, and available cuts. I allocate to my Reserve list first, then it opens.
When the animal is sold through, the release closes. There is no restock.
