Guided tasting,

A flight is two to four cuts, chosen around a specific theme: fat structure, aging stage, cut position, or cooking method. I assemble them with a purpose — not as a variety pack, but as a comparison that teaches you something.

Flights are small enough to cook in one session. Each arrives with notes on what to look for — what I want you to notice in the fat, how the texture changes with heat, where the flavor develops.

Most of my Reserve buyers started with a flight. It's the lowest-commitment way into dairy beef.
