Animal-Specific Selections
Each release is tied to one animal. Documented breed, finish method, aging days, fat character, and available cuts.
When the animal is sold through, the release closes.
Reserve selections are offered as animals are processed, aged, and assessed. Every release includes the full animal record — breed, dairy origin, finish, aging method, fat character, and tasting notes. Quantity is finite by definition.
One animal, completely documented. Breed, finish, aging, fat character. When the animal sells through, the release closes.

Tasting notes
"Mineral forward with a clean dairy-milk sweetness. Long finish. Fat adds richness without heaviness."
Dry-aged individual cuts from Reserve animals. Available while the release is open. When the cut is gone, it's gone.

Dry-aged strip loin from a single Reserve animal. 28 days of aging reveals concentrated flavor, firm texture, and a clean, long finish characteristic of dairy genetics.
Curated selections from a single animal. The full Reserve experience, assembled. Each box includes provenance documentation.
Limited
A curated autumn Reserve box: dry-aged strip, bone-in short rib, braising shoulder, liver, and a bone bundle — all from a single animal with full provenance notes.
Guided tastings for the curious buyer. Two to four cuts I choose for comparison — fat structure, aging stage, or cut position. The lowest-commitment way into dairy beef.

An entry point to Reserve dairy beef — three small cuts selected to demonstrate the character of a single animal across different primal positions.

Details →Why this animal, this cut, this aging
Breed, dairy farm of origin, finish method, season. The animal record travels with the order. Provenance is documentation, not marketing.
Dry-aged per animal — based on what I observe in fat coverage, lean quality, and structural condition. Not by fixed schedule. The dairy fat repays patience differently than conventional beef.
One animal, finite cuts. When the striploin is gone, it is gone. The Reserve is not a product line — it's a series of individual animals I present honestly.
