The Selection

Why No. 14 entered the Reserve.

Most Vorfreude animals become Market provisions. Reserve begins differently — an animal enters the Reserve only when her individual character warrants being documented separately.

Selected for her balanced frame and the character of her fat — white, waxy, and distributed in fine, even threads rather than large pockets. After five years on pasture, her muscling had developed slowly and evenly, the kind of density that grass finishing produces over time. She promised a clean, structured beef rather than a rich, heavy one.
