Shipping Safety
Every order leaves the freezer frozen solid. Here's what to do when it arrives — and how to handle any situation safely and confidently.
Upon delivery
Frozen solid
Everything feels firm and cold. Move it straight to your freezer. Best case. You're done.
Partially thawed
Some packages are soft but still cold to the touch. Completely normal in transit. Handled correctly, the beef is still completely safe.
Fully thawed
Product has thawed but remains cold. Still safe — as long as it hasn't reached room temperature. See the handling options below.
If your beef arrives thawed
Both are sanctioned by USDA guidelines. Choose based on when you plan to cook.
—Refrigerate immediately at 40°F or below.
—Steaks, chops, and roasts: use within 3–5 days.
—Ground beef: use within 1–2 days.
—Plan meals around these timeframes for the best result.
—Safe to refreeze if the meat is still cold (40°F or below).
—USDA: 'It is safe to refreeze it without cooking, although there may be a loss of quality due to moisture lost through thawing.'
—Your beef was frozen only once before shipping — refreezing creates only the second freeze cycle.
—Consume within 6 months for best quality.
USDA guidelines
Freezing to 0°F (−18°C) inactivates microbes like bacteria, yeasts, and mold. Frozen foods stored continuously at that temperature are safe indefinitely — quality declines over time, but safety does not. — USDA Food Safety & Inspection Service
Temperature threshold
Do not refreeze any food left outside the refrigerator for more than 2 hours — or 1 hour when ambient temperature exceeds 90°F.
Ice crystals test
If the beef still has ice crystals, or feels as cold as a refrigerator (40°F), the USDA confirms it is safe to refreeze.
Quality note
Refreezing is safe but may result in slight moisture loss. The flavor and texture difference is minor — especially in vacuum-sealed product.

When you're ready to cook
Refrigerator thawing
SafestPlan ahead. Small packages (≈1 lb) may thaw in an hour; larger packages overnight or longer. Meat thawed this way can be safely refrozen.
Cold water thawing
FasterSubmerge in leak-proof packaging. Change the water every 30 minutes. Cook immediately after thawing — do not refreeze without cooking first.
Microwave thawing
FastestUse only if cooking immediately after. Microwave-thawed meat must be cooked before it can be refrozen.
Packaging issues
Occasionally a vacuum-sealed package develops a small tear in transit from sharp edges, temperature changes, or normal handling. The beef inside remains completely safe — the seal is about quality and moisture retention, not food safety.
What to do
Place the contents — meat and any liquid — into a freezer-rated bag with a secure seal.
Remove as much air as possible and close tightly.
Freeze immediately if not cooking soon.
Don't discard the liquid. Those natural juices are full of flavor — useful for marinades, gravies, or pan sauces.

Quality and safety are different things. The USDA's position: properly frozen beef at 0°F is safe indefinitely. Quality — moisture, texture, flavor — declines over time. Vorfreude recommends consuming all product within 6 months — not for safety reasons, but for the best eating experience.
