A simple preparation for a special cut.
Ingredients
Method
Let the steak sit at room temperature for 30 minutes.
Pat dry with paper towels.
Season generously with salt and pepper.
Heat oil in a cast iron pan over high heat until just smoking.
Lay the steak in the pan and don't move it.
Sear for 3 minutes on the first side.
Flip and cook for 3 minutes on the second side.
Add butter, garlic, and thyme.
Tilt the pan and spoon butter over the steak for 1 minute.
Transfer to a cutting board and rest for 5 minutes.
Slice against the grain.
Rachel's Notes
The pan should be hot enough that the steak sizzles the moment it touches. If it doesn't, the pan isn't ready. I cook by touch and sound more than by time — listen for a steady, aggressive sizzle that softens as the crust builds.
Serving
Slice thick and serve with the pan butter. A simple salad or roasted potatoes is all you need.
