A slow preparation for colder evenings.
Ingredients
Method
Season the roast generously with salt and pepper an hour before cooking.
Preheat the oven to 325°F.
Heat oil in a heavy Dutch oven over medium-high heat.
Sear the roast on all sides until deeply browned.
Remove the roast and set aside.
Add onion, carrots, and garlic to the pot and cook until softened.
Stir in tomato paste and cook for 1 minute.
Deglaze with red wine, scraping up any browned bits.
Add beef stock, bay leaves, and thyme.
Return the roast to the pot, cover, and transfer to the oven.
Braise for 3 to 3½ hours, until the meat falls apart with a fork.
Rest for 15 minutes before serving.
Rachel's Notes
I watch for the moment the meat relaxes — when it wants to fall apart on its own, it's ready. Don't rush the sear. The color you build in the first ten minutes is the flavor you taste at the end.
Serving
Serve over polenta, mashed potatoes, or crusty bread. The braising liquid makes a natural sauce — skim the fat, taste, and adjust salt.
